A pupusa is a thick griddle cake or flatbread from El Salvador and Honduras. The dough is made from cornmeal or rice flour and hand‑shaped around a savory filling such as cheese, refried beans, chicharron or squash. Each pupusa is cooked on a comal, served with a tangy curtido (pickled cabbage slaw) and a mild tomato sauce, and eaten by hand. Pupusas are the national dish of El Salvador and each one averages about 350 calories.
